Flourless Sweet Potato Blender Pancakes

Ok for real. Have you had flourless pancakes, that actually don’t taste like pancakes? Like the texture is way off? Well. Look no further… these are legit, and you won’t miss the flour. In fact, you could get away with serving these, without announcing they are flourless.. you know, for those who would not like them once they knew there wasn’t any flour in them, after they actually did like them! {you know who I’m talking about!}


Oh and let me add how simple they are… as in, no mess!  Yep, just pop all of the ingredients into a blender or what ever you use, blend, and pour– ta-da!

I’ll give you one more reason yo have to make these, there’s absolutely no sugar added!!

Ok, on to the recipe, because I know you are now drooling and need to make these right now. Make extra so you can quickly reheat for later- you can even pop these in school lunches!

Flourless Sweet Potato Blender Pancakes – No Mess!

Yield 8-10 pancakes depending on size preference.

1 ripe banana

1 cooked sweet potato

2 eggs

2 TBS ground flax seeds

1 tsp vanilla

2 tsp cinnamon

add water to desired consistency

Heat coconut oil or cooking spray in a skillet, on low.

Put all ingredients into a blender, blend, and pour onto low- heat skillet. You want to cook these slow, so the insides are fully cooked, so, several, minutes on each side.

Flip once browned. Done!

Serve with your favorite toppings!

{melted peanut butter is realllllly good}.

Yall! I’m so excited to share with you this simple and quick recipe. The star of the show? Wild Orange essential oil.

So, we’ve been apple crazy here, we’ve been making the fun little apple sandwiches and cooked apples (I’ll have to post that super quick, but delicious recipe later). But then it hit me, I am loving the Wild Orange so much, not only it’s refreshing taste, but how it makes me feel. So, I made– Energizing Apples!

These are soooooo good! Not only are they crunchy and crisp, they have a burst of juicy orange flavor! These are perfect for a mid afternoon pick-me-up snack. Or packing in your child’s lunch, for a mid-day boost!

  • Slice up as many Apples as you want to use.
  • place in a bowl and completely cover with water.
  • Add 2-3 drops of dōTERRA Wild Orange essential oil.
  • let them soak for anywhere from 1 hour- overnight.
  • drain–enjoy!!

The best part- the citrus from the Wild Orange helps keep the Apples from browning. If you are sending them in a lunch, you may want to keep them in some water in a leakproof container.

My New Journey

I’ve always had a passion for health and wellness, it is just part of who I am, for as long as I can ever remember. Except I lost it for a while. I spent the last 2 years in survival mode. Just trying to get through each day, only to turn around and do the same the next. Our family moved a few years ago, it was a big move, and our girls were young. I stepped out of the health and wellness industry to do what I had to and wanted to at that time- focus on my family and our move. It was exactly what I needed at that point in my life. I was able to clear my mind and open it to more. I focused more on prayer and becoming closer with God, which brought so much more to my life, and things I never could have imagined.

During that time, I was diagnosed with costochondritis,  inflammation of the cartilage that connects your ribs to your sternum. I figured this out after not being able to exercise because my chest hurt too much. It didn’t go away, so I had it checked out. However, I was told it would resolve within days to about 3 weeks, if I rested, didn’t exercise, used ice/heat and antiinflammatories. It didn’t.

I then, tried (gasp!) steroids,  something I really didn’t want to do, but I really wanted relief. It had been 3 months. Unfortunately the steroids didn’t help either, even a bit, nothing. I would exercise bc I just couldn’t take it anymore, I couldn’t not exercise, but I could barely. Some days I couldn’t roll out of bed, or lift myself up.. or pull the clothes out of the washer, or open the refrigerator,  but I had to do it, I had to get through… I had people depending on me, a family to take care of.  I kind of gave up on healing my costochondritis,  I thought this was just something I was going to have to live with.

But if you’ve ever dealt with chronic pain, you know, each day gets harder and harder, and the pain- more difficult to ignore.

With the pain came extreme fatigue, with a side of depression. Any mother out there will agree, there is just not time for any of that.

So, as of recent, with all of the above + running a clothing line, sick daughters back to back-to back, a husband out of town…

I cried out to God.

I needed to breathe.

I needed a way out – an answer.

The very next day, dōTERRA entered my life. None of the actual products, just a conversation about it–

I dare you to show yourself love.

Are you up for a challenge? No, this is not the typical plank, or ab, or squat challenge. This challenge is much harder than any of which you may have done in the past. How about a challenge to love yourself… In 21 days. We all know by now, it takes 21 days to make or break a habit, right?

What would happen if you made it a habit to give yourself love, respect, worth…? Would that make a difference in your life..? How do you think it would affect your thoughts, your mood, your decisions? Would you want to make it a habit to pour life into your heart, soul, mind, and body?

With this challenge, we will follow Scriptures for self love and self worth.

Look in the mirror, say them out loud to yourself, write them down and keep them with you through the day, write them on your mirrors, write them on sticky notes… On your fridge, next to your bed….. Wherever you will see them. So, when you have a negative thought, you can dismiss it, right then and there.
But… No, no, no, no! Really, you might say…..what I’m thinking is legit, it’s not just something in my mind, it’s real…
Then you say it again, and again, believe it. Believe it. You are more than thoughts. That’s all they are, thoughts. Not reality. Reality is that you are worthy, worthy of love, respect, admiration, for yourself. If you don’t give yourself that, don’t expect anyone else to.

Take these 21 days to nurture your soul. Take extra time to feed your soul. If it means waking early or staying up later, make time for YOU.

Read a book
Take a bath
Drink a HOT cup of coffee or your favorite drink
Call and catch up with an old friend
Mend a broken relationship
Forgive someone
Pray for someone else
Pray for yourself
Do a kind deed, without expecting anything in return
Compliment someone
Compliment yourself
Take something negative from your past you’ve been holding on to… Let it go. For good.
Go for a walk
Put on your favorite music and sing/dance without a care
Is there something you’ve been wanting to try, but haven’t given yourself the time to do it–DO IT.

Now, how are you going to learn to love yourself in just 21 days, you ask? Something that is SO hard for so many. It may be hard, but it is not impossible. Nothing is impossible for our mighty God. Again, I encourage you, write these down, screen shot them, memorize them, whatever you have to do to keep them with you, because they are your battle weapons, your defense against the enemy-yourself and your thoughts.

Song of Songs 4:7 All beautiful you are, my darling; there is no flaw in you.

Love.this.so.much. The soundtrack to my life. Because this line right here, this scripture, has literally given me life.
Read it again. And again. Did you read that??- no flaw– none— you are beautiful. When you’re looking in the mirror and you start to pick yourself apart… STOP! Dismiss it, right then and there. Say it out loud.. Speak to your soul…
I have no flaws, I’m flawless, and beautiful. Take that negative mind trash– throw. it. out.

Isaiah 43:4   you are precious and honored in my sight, and because I love you.

Somebody loves you- if you can’t think of anyone- know that your Heavenly Father loves you- no. matter. what. To Him, you are precious, honored, and loved, and guess what? He created you. So, why shouldn’t you feel those things about yourself?

Hebrews 10: 35   so do not throw away your confidence, it will be richly rewarded.

Do NOT mistake confidence with arrogance. People believe they aren’t worthy to feel confident. I did- but I was wrong. It says right there- your confidence has great reward. So, be confident- of who you are, and whose you are.

1 Samuel 16:7    man looks at the outward appearance , but the Lord looks at the heart.

I’ve written about this one before– it speaks for itself, doesn’t it?
We are so quick to judge others on physical traits, on things we can see. Let me ask you something, do you want to be judged solely on your physical appearance? I’m sure not. If that’s the case, which is it, I can’t even imagine some days- most days- A LOT of days- how I would be judged. Some, understandable, yes, but unfair. It is totally unfair to be judged, or to judge simply on physical appearance! Now, our God- who is perfect, doesn’t even care about that stuff!
He doesn’t care if you forgot to brush your hair that day, or conceal your dark circles under your eyes, or replace the pedicure your 5 year old gave you 3 weeks ago (currently guilty), or that you are wearing sweats in the grocery store because nothing else really fits you right because your body is changing and you haven’t had time to take care of yourself, if you have acne blemishes, if you’re hair seems flat. He doesn’t care. He doesn’t care if your makeup is perfectly contoured, if your eyebrows are on point, if you used an app to pick out your outfit, or what shoes you chose out of the gazillion that you own. He doesn’t care if you have flat abs. He doesn’t care.
No one else should, and neither should you. Wait– I’m not saying you should ‘let yourself go’, blah..blah..blah… Or give up on yourself- I’m saying, check your priorities. Look at His priorities— your heart. What would your heart look like to Jesus- what would you want it to look like to Him? Be it. Do itPriorities.

Psalm 139:14    By I am fearfully and wonderfully made.
YES, you are!
your works are wonderful; My soul knows it very well.
Keep it on repeat until your soul does know it very well!

Psalm 46:5    God is within her. She will it fall.

That’s you, you will not fall, God is within you. He is your Army, you will not fall, so keep going. Do not give up, you deserve this, and anything. If you’re going to fall, fall on Him, because He will be there, and He will pick you back up. I promise.

Why I don’t have goals. 

Squad goals. Relationship goals. Hair goals. Life goals. Body goals.
Goals. Goals. Goals. Goals. Goals.

If you’re on any social media platform- you’ll recognize this term.

Now, I’m not saying that having a goal is bad. But, there is a fine line between using a goal to motivate you to better yourself in a healthy way, or to make you look at your own life in an unhealthy way– enter, comparison.
I think it is safe to say that we all know that social media is mostly a look into people’s lives in their best moments. You don’t see the behind-the-screens of their daily lives. And honestly, in the social media world dominated with filters and photoshop, most of the time, the bests aren’t always “truly” their best, if you get what I’m saying. Sometimes they are– and that is magical!
So, when you set unrealistic goals or compare yourself to that which is unrealistic, you are setting yourself up for failure. Not only that- but the second you compare yourself to someone else- you strip away layers of love for yourself.

Because when you want “something” someone else has (which I’m pretty sure is against God’s will, so nothing good will come from that)–

whether it be a relationship– marriage– body physique– hair — money– whatever.

You discredit what you do have. Little by little, you will begin to not only focus on the things about yourself that you don’t like, or don’t have, bc you’re giving too much focus and energy on what you like about someone or something else.
Think about it– when something goes really great, (Yay!!) — you want to share it, right?!

5 seconds later, that might not be the case. Let me humor you for a sec… I know I’m not the only one who changes the second they walk through the door, right? I mean I don’t care how long it took me to pick out my outfit… Or get ready, it’s coming off the second I get home. So if I would post a picture where I’m actually dressed, with makeup on, and hair done, that does not mean that as a stay at home momma, this is happening everyday. Or all day, for that matter, bc that would be unrealistic (for me). I’m talking, do not judge someone’s social media to your actual life. Someone who keeps a clean house, or at least in the social media world, is probably struggling with some other part of their life… Or, get this– they struggle with the need to always keep a tidy house! Ha, I laugh, but it’s real. Like, for real. I live it. But, someone is blessed with the natural gift of tidiness– maybe they are struggling with something else… patience, cooking, self worth… The list goes on.. Regardless, focus on your gifts, not theirs….

What gifts do you have? Dig deep…. I know they’re in there!!!
Think about this—-

Only you can be the best you– that’s right- YOU!!! In case you didn’t get that.

No one else can be you better, and you cannot be anybody else better than they can be themselves. So, let you be you- and everyone else, themselves.
You were made to be unique, you have your own special gifts, talents, characteristics. You were created with a purpose– but you can be sure you won’t find it trying to be someone else. Back to that purpose… No one else can fulfill that purpose better than you. Think about that– let it sink in….. Isn’t that incredible??
So, please. Do not try to change yourself to be like someone else. If you need to change– like a bad habit, addiction, negative body image, motivation….anything.

I have a few suggestions that may help:
1. Step back!! Take a social media detox. Take that time to focus on YOU, and all of your worth, bc it’s there. You have worth.
2. Stop and think… If I have, or achieve _________ , will I truly be happy? Keyword: truly – not artificial or temporary happiness, I’m talking happiness you can feel in your bones. If not– let it go!!! Ask yourself what will help you achieve that happy-to-the-bones? Go after it!!!
3. Focus on YOU! For every comparison or negative thing you entertain- come back with 5 positives- 5 things you have, chances are someone else is praying for those.
You’ll learn to appreciate your unfiltered, raw, life. It may not always be perfect and get the most “likes”. But it’s yours, and that is what matters.

amp life–why I’m here.

So this is my first blog post. I mean, it is my first blog post, like, ever. I have never thought of myself as a writer, publicly. I process a lot mentally, and have always written, journal type content. Never for people to see, so this is new to me! I pray that what I have to say will encourage, give hope, love, grace in some way to even just one person who needs it.

I guess here I should explain why I am even here and why I am throwing myself out there for the world to see, mostly my flaws, because I am, flawed. That’s where I am now, learning to be okay with that, my flaws, and my imperfections, acknowledging them, and being okay. Notice I said, learning. I am here because I have something to say, about being a woman, being a girl, with the struggles of society, and myself. About learning to love myself, all my flaws, and still love… Me. But, it is so hard!! My story begins when I was about 10 years old… What do you think of when you think of a 10 year old? A child, right? Yes, a child. I was a child. I remember specifically a day when I wished my legs looked more like my friend’s. I wanted them to be thinner, and less muscular… I wanted the shape to be different. I hated my legs. I was a child. Is that not awful??? The only thing a 10 year old should worry about, is like whether they want to ride their bike…. Or jump rope, or something, right?! Here’s the thing… There was absolutely nothing wrong with my legs, or my body, or my health, or me. I was healthy, active, athletic, talented at many things, beautiful. I was beautiful. But I took that one thought about my legs, and let it control me for most of my life. However, at the time, I had absolutely no idea.

So, fast forward through the next 20 years of my life…. Most of them were spent starving, by choice. Not because I didn’t have access to food, because I  did, healthy food at that. Because I starved myself. I tortured my body, and my mind.

Growing up is hard enough, right? There are so many things children face through stages of life, insecurities are bad on their own. Now that I’m a mother, of all girls. My greatest fear is they have one negative thought about themeselves, or their body. I’m serious, what I went through was torture. I NEVER want my girls, or any girl, any woman, to experience it, even for one second. You see, I grew up in a time when words like ‘skinny’ and ‘fat’ were tossed around like nothing. (I say that like I’m really old. I’m really not that old, I promise. Old enough, but not that old). So here’s the thing, as much as society is trying to not use those specific words, there will always be words. You know what I mean, words that destruct our souls, tear us down, yet we use them every day. But, if we can recognize it, and change it… Or even better, learn the opposite. Learn to love ourselves before we learn to hate ourselves. Whaaaaaaat? Are you crazy?…  You ask. It may sound crazy, and I’m sure many will roll their eyes at it. That’s ok, because there are some that don’t have this issue…never have and never will, it’s so foreign to them that it is so difficult to not care what others think, not care what you think, of yourself. Yet, to the ones who know what I’m talking about, it sounds so.gosh.darn.difficult. Sometimes, it’s so difficult, we choose to give up, because it seems easier. I’m telling you, my friend, right now it may see easier to just hate on yourself and give in. But, day after day, month after month, year after year, it’s really. really. really. hard. Hard to do anything. I’m talking, it’s hard to form solid relationships, make legit decisions, be social, be happy. I’m only naming a few here. Annnnnnnd I’m getting off-track…….. So, if we learn to love ourselves first, love is stronger than hate. The great Lord even tells that, ‘above all, the greatest of these is love‘.  So, with a strong armour of love, we can fight the battles against hate. And win. So, I hope to enstow that upon my girls. Encourage them to love themselves. Everything about themselves. Even their flaws. Because they deserve it. Everybody deserves love, from others and for themselves. You see, I’ve learned, you can’t give love, if you don’t love youself. It’s truth, that’s all, you just can’t do it.

So with what I’ve learned from my past, and where I am today. With the goal of raising my daughters up in a positive light of themselves and others. I started a clothing line. To change the way we see clothes, to take the stress away of sizes. For me, it was a struggle, the sizes. It was like beating myself up every time I got dressed, not matter what the size. Even if it was super small, I wanted it to be smaller, always. So I was always pushing towards a goal, I would never reach, because it always had to be smaller. So, my clothing line has nothing to with numbers, smalls or larges. Because we are worth more than that, we are more than numbers or words to define us. So, my clothing line brought me here, blogging. Sharing my story, my flaws, my faults, my struggles, but also, and most importantly, my strengths, your strengths. My hopes, dreams, for you and me. Hoping to be a light to those who need it, a ray of sunshine through the storm. A smile, when you need one, or can’t do it yourself. I’m not perfect, I don’t have all of the answers. But I have love to give, and you deserve that!!
